How I maintain my starter
I feed my starter at a 1:5:5 ratio.
Mix 1 part starter, 5 parts unbleached flour, and 5 parts water by weight.Example: 2g starter : 10g flour : 10g water
Consistency:Your starter should look like thick pancake batter.
Storage:Cover loosely with a lid or plastic wrap while it rises.
When I’m not baking, I feed my starter once in the morning and place it in the fridge with a tight lid once it peaked.
When preparing to bake I feed my starter twice a day for two days prior to baking day.
